Cultured Crème Fraîche
The “Living Cream”—a rich, cultured staple essential for stabilizing hot sauces and finishing soups.

Headnote
While sour cream relies on acid to thicken, true Crème Fraîche relies on high fat content (30%+) and bacterial fermentation. This high fat content creates a protective emulsion around the proteins, allowing this cream to be boiled in sauces without curdling—a feat impossible for sour cream or yogurt. We use the “Mesophilic” method (buttermilk culture), which thrives at room temperature and produces diacetyl, the compound responsible for that luxurious, buttery aroma.
Teaching Idea: The “Ultra” Warning. You must check your label. Do not use “Ultra-Pasteurized” cream. The high-heat processing destroys the protein structure needed for a firm curd, resulting in a runny, unstable product.
Ingredients

- 480 g (2 cups) Heavy Cream (Pasteurized, NOT Ultra-Pasteurized)

- 30 g (2 tbsp) Cultured Buttermilk (Must contain live active cultures)
Mise en Place (Action Checklist)
- Sterilize the Vessel: Wash a 1-pint (half-quart) Mason jar and its ring with boiling water. Dry completely.
- Temper the Dairy: Ensure the heavy cream is between 22°C–25°C (72°F–77°F).
- Prepare the Cover: Cut a square of cheesecloth or a coffee filter to fit the jar mouth.
Method
Phase 1: Inoculation.
Pour the heavy cream into the sterilized Mason jar. Add the cultured buttermilk. Secure the lid tightly for a moment and shake vigorously for 15 seconds to distribute the bacteria evenly.
Why: Uneven distribution can lead to “hot spots” of fermentation and pockets of uncultured cream that may spoil.
Phase 2: The Incubation.
Remove the solid lid. Place the cheesecloth (or coffee filter) over the mouth of the jar and screw the metal ring down over it to secure it in place.
Why: This allows the culture to breathe and prevents condensation build-up while keeping dust and pests out.
Place the jar in a draft-free spot at room temperature (22°C–25°C / 72°F–77°F). Let it sit undisturbed for 12 to 24 hours.
Phase 3: The Set Check.
After 12 hours, gently tilt the jar. The mixture should look like thick yogurt and pull away from the glass in a mass rather than flowing like a liquid.
Sensory Cue: It is ready when it reaches the consistency of soft mayonnaise and smells distinctly tangy and nutty. If it is still runny, allow it to ferment for up to 12 more hours.
Phase 4: Cold Maturation.
Once set, remove the cheesecloth and seal with a solid airtight lid. Move the jar to the refrigerator.
Why: The cold halts the fermentation (stopping the souring process) and “ripens” the texture. The fat will crystallize in the cold, making the crème fraîche significantly thicker (almost spoonable) after 8 hours.
Variations
- The Yogurt Variant: If you prefer a sharper, cleaner acid profile without the buttery notes, substitute the buttermilk with 30 g (2 tbsp) Plain Yogurt with live cultures. Note that this version may take longer to set at room temperature.
Chef’s Notes
- Sweet Crème: For dessert applications (like topping fruit), stir in 15 g (1 tbsp) of confectioners’ sugar and a drop of vanilla bean paste after Phase 4 is complete.
- Shelf Life: As this is a live fermented product, it will last 2 weeks in the refrigerator, often getting tangier with age.
Glossary
- Inoculation: The introduction of bacteria (the starter) into a medium (the cream) to begin fermentation.
- Mesophilic: Bacteria that thrive at moderate temperatures (20°C–45°C). These are the primary workers in cheese and buttermilk production.
- Ultra-Pasteurized: A process of heating milk to 138°C (280°F) for 2 seconds. It extends shelf life but damages the proteins required for cheese and curd making.
